Coconut Chocolate Drizzle Popcorn

I posted on my Instagram a picture of my take on healthier popcorn. I got a really good response from everyone so I decided to write a blog post on how to make it!

Ingredients:

Popcorn

  • 1/4 cup of coconut oil
  • 1/2 cup of popcorn kernels (I used regular kernels but they do sell organic kernels as well!)
  • Sea salt to taste

Drizzle:

  • 1/2 of dark chocolate chips
  • 1/4 cup of natural peanut butter

Directions:

Popcorn: 

  1. Place large pot on medium heat.
  2. Add coconut oil. Once melted, the oil should completely cover the bottom of the pot; you may need to add more oil to achieve this.
  3. Place popcorn kernels in pot. Make sure they are evenly distributed on the bottom.
  4. Place lid on pot making sure the lid is slightly ajar. (Shown in picture)
  5. Frequently slide the pot back and forth on stovetop. This will keep the kernels form burning (I usually cover the pot completely and slide it. Then ajar the lid again when I stop sliding the pot. This way the oil does not pop onto my skin.)
  6. Once the popping slows down, remove pot from heat and let it sit till the popping is completely done.
  7. Then pour popcorn onto backing sheet; making sure the popcorn is evenly distributed.
  8. Sprinkle with desired about of salt.
  9. Next drizzle chocolate and peanut butter mixture on top with either a fork or spoon.
  10. Place the baking sheet in the freezer for 30 minutes or until the chocolate/peanut butter hardens.
  11. Enjoy!

Topping:

  1. Microwave chocolate chips and peanut butter until melted. You can also use a double boiler. 

I love how you can taste a slight coconut flavor! Sometimes I will skip the chocolate drizzle and just eat it plan, it is still as yummy. Let me know what you think!
